Who would have thought Alfalfa a world wide known herb that has been cultivated for thousands of years, would gain popularity as a microgreen in modern times. Alfalfa was used since ancient times and was known as a miracle herb. The Arabs called it the “Father of Herbs”. Persians and the Medes began cultivating Alfalfa in Greece. After they invaded that region.  Alfalfa was introduced to North America by the Spanish. In the past Alfalfa has been used to treat arthritis, boils, cancer, scurvy, and bowel problems.

In modern times science has researched this useful herb. And has found it to be the most nutritious food available. Alfalfa can help build blood. And is  useful for anyone who suffers from anemia. In research it was found to help lower cholesterol levels. And is helpful in healing ulcers, arteriosclerosis, liver toxicity, arthritis, diabetes, and in strengthening the capillaries and blood vessels. Include this extraordinary herb in your diet.

Vitamin and Mineral Content

You won’t believe the vitamin and mineral content in this small nutritious microgreen. It is thought to contain all the vitamins and minerals know to man. Amazing right! And it also has high levels of chlorophyll, vitamins A, D, and E. It is rich in calcium, iron, potassium, sodium, magnesium, B1 and B2. 

If you feel you need more vitamins and minerals include this extraordinary herb in your diet. It is easy to grow and takes about a week to sprout. I consider it a whole body tonic. The flavor is mild and you can add it to a salad, sandwich, pizza, smoothies. 

Alfalfa Sandwich Spread 
  1. 4oz Softened Cream Cheese
  2. 2 T. Minced chives                           
  3. 1/4 Cup alfalfa sprouts
